Peel and coarsely cut 4 small cucumbers
Pop them all in a pot and cover with filtered water and add your favourite vegetable stock to your liking.
Bring to a boil, taste and adjust any seasoning or stock it might need
while it is just beginning to boil chop up one large courgette. I used a white one but green will do the same. No need to peel just chop and pop in the pot. Bring to boil and if needed add little more water. Boil for 6 – 10min till just softened. Remove from heat.
Add an avocado and chopped into the soup and let it cook with the heat of the stock 5 min
If you want let it all cool down a bit before blending seasoning or stock it might need
taste and add salt and pepper
Using a hand blender mush it all together
once it is blended you can add more seasoning and a also a small carton or two of cream or I prefer soya cream and the amount of cream is up to you. It is a perfectly good soup at this point too without adding anything at all!
Now you can also add any fresh herbs like dill or chives to be blended in or just serve with some fresh chopped herbs on top. These quantities should make about 11/2 – 2 litres of soup so use your own judgement to adjust the quantities for you. This is best made the day before and served well chilled in chilled cups or bowls. It will keep for about 3 days in the fridge if it lasts that long.
